The wine is fermented in concrete and then aged for six months in acacia barrels. The Manzoni Bianco grape variety, a cross between Riesling and Pinot Blanc, remains a rarity in Trentino and the wider world of wine due to its diva-like nature in the vineyard and extremely low yields. Across Trentino Alto Adige, Friuli and parts of Veneto there are no more than 23,000 hectares dedicated to this gem of a grape. Again, one can only admire the Foradori's for their commitment here as this is definitely not a money maker. It offers an unmistakable aromatic nose, with juicy peach, quince and Mirabelle plums, all mingling with fragrant notes of jasmine and cherry blossoms. Once you take your first sip and the wine hits the tastebuds there are hints of salty limestone, despite the grapes being grown on red clay and dolomitic slate. It has a laser-like precision and delightful saltiness, with sage, clover, and delicate wildflowers transitioning into ripe pineapple and Williams pears. There is a beautiful texture and structure to the wine and as it lingers on the palate becoming wonderfully creamy.

About the Winemaker

In the heart of Trentino Alto Adige, nestled up high in the Italian Dolomites, Agricola Foradori is a winery that has long stood as a beacon of biodynamic farming and innovation. The region, where Germanic customs blend seamlessly with Italian traditions, has historically been dominated by large cooperatives and conventional farming practices. However, Foradori has been a trailblazer in shifting towards sustainable and holistic viticulture. Since 2009, the estate has been Demeter certified, affirming their commitment to biodynamic principles and organic farming.

Wine has been produced on the estate since the 1930s, but it was Elisabetta Foradori who truly put the winery on the map. Under her visionary guidance, which began in 1984, Foradori became renowned for its dedication to the genetic diversity of the Teroldego grape and its distinctive approach to winemaking. Since 2013, the estate has been led by Elisabetta’s children- Emilio, Theo, and Myrtha- each bringing their own fresh perspective and energy to the family business. Emilio and Theo now oversee winemaking and marketing, while Myrtha has steered the farm's focus towards a more diversified, holistic approach to agriculture. She has introduced a vegetable and herb- growing programme, largely cultivated under the pergolas of their Mezzolombardo vineyard, furthering the family’s commitment to sustainability and biodiversity.

Foradori’s philosophy is one of quality over quantity and constant re-innovation. Such as increased whole-cluster pressing and a move towards aging wines in clay amphorae instead of barriques.
